At The End Of The Day, Your Feet Should Be Dirty

I'm may be crazy. And I probably have NO idea how much work I'd be creating for myself....in fact, I'm sure I don't....

But one of these days, I will have me a cow, some chickens, a couple goats, maybe a horse and definitely a muddy pig. Oh, and throw some honey bees in there for good measure as well.

I want a farm. a real farm with real farm animals...a sweet, smelly stench in the air...dirty kids! (oh, we already have that part!)

Since moving into the "barnhouse", the kids have repeatedly asked for animals and to have a farm. So the idea has always been there. We've always dreamed of this being our little farm...we have the garden and a dog! ha! But we want a "real farm" as they put it.
 
This past weekend, we went on a spontaneous trip to the Blue Ridge Mountains. Sometimes I think I was made for that place. I could totally sink my bare feet into the freezing streams and dance through the grassy knolls. I could rock my babies to sleep on a big wide front porch in a rickety old rocker with a quilt over our laps. I could see us growing old there. But the roads are so long! The curves, so curvy!! And I get super motion-sick. So trips are probably the extent of my life in the mountains. But I do love it. It feels like home to me. In fact, a little shop in Blowing Rock was where I first heard Michael Buble over the stereo system and instantly fell in love. "Home" was our song.  It's a barefoot in the rain, arms tight around each other, swaying to the beat kind of song.



But our home is where we are now. And I'm ready for my farm...to grow our peaceful haven by a few chickees and calves!


What really set my heart and mind in motion was after leaving Linville Caverns, we backtracked to a little store we saw alongside the road that was selling cheese. Cheese, as in, the best food on the planet...fresh, homemade, straight from the cow in the pasture, cheese. The Caverns give you a ticket stub, that, if you present to the store clerk at , they'll give you a dollar off your purchase! Bingo! We love a deal!



The rain pouring didn't stop us from having a blast. We ran for the door and as soon as we landed on the porch, Jasper hollered "Momma! It smells so YUCKY!"....I said, "Baby, that's the sweet smell of poopy cows!" we giggled, opened the door and I walked straight into home.

Farmer man was sitting on a cooler spooning his icecream with his leathery-tanned skin and white t-shirt and muddy boots as granny sat on the bench quilting by hand. She marveled at Alanna's teething necklace wondering where those were when her children were little! The cheese samples called our names...

...Key Lime spread with graham crackers (the grown-up's favorite)
......Buttercup cheese with spicy pepperoni (Lukas' favorite, the buttercup, not the pepperoni!)
..........Roasted tomato and basil spread with crispy crackers (who doesn't love a dip?!)

And a cooler wall full of curds, cheese blocks, homemade pickles, farm-fresh eggs. Holy toledo.

It's exactly what I want. (To be a voluptuous farmer's wife, overdosed on cheese, obviously!!!)

I want my tanned, rugged and musky husband sitting by my side enjoying a bowl a handmade icecream or cheese drizzled with honey as the rain beats on the tin roof of my red cabin store.

I want my kids running around in muddy boots and learning the importance of raising animals and providing food for our family. 

I long to use my hands to feed people; cultivate the earth; to prick myself with quilt pins.

I really do want the simple life. I want a farm that keeps us all busy and together.

I don't want much. But it sure will take a lot to make it happen. Our garden is growing, we are on our way to a more self-sustaining life. I don't want to go backward...but forward isn't where I want to be either. There's nothing wrong with the way people use to live before traffic and cellphones and Facebook and RUSH.

I want that.

You may think I'm crazy or don't have it in me....
but it's my dream and a burning desire of my heart.

While I pound away on a computer from 7-5:30 each day, my heart beats for home.
My Pinterest board knows that farm life is on my constantly begging at me.

So if the Good Lord's willing and the creek don't rise, hopefully one day soon, I'll invite you over for some fresh cheese curd, a ripe summer tomato & watermelon salad, maybe some warm bread straight out of the oven slathered with freshly churned butter, and we can chat about the crazy chickens, our dreams, homeschooling and raising children.

My 21 Day Fix: DAY THREE

DAY THREE:

1 cup unsweetened Almond Milk
Mixed berries (1 purple)
Natural Peanut Butter or PB2 (1 tsp)

Blueberries (1/2 purple)

Dinner:

(Sorry for the blurry photo...plus it looks like a sloppin' mess on my plate! Let me reassure you, it was absolutely DELISH!)

My Takeaways:
I'm loving whipping up different recipes and combining things together that I never would have before. And...HOLY LEG BURN! I am so out of shape. But that's the point, right?!

My 21 Day Fix: Day TWO

DAY TWO:

I missed snack today because breakfast was way later than normal but plenty filling with both dishes. I guess we could call breakfast "Snackfast" ha ha!

2 raspberries & 1 tsp almond butter

MY TAKEAWAY:
I weighed myself tonight. I am down THREE POUNDS since Sunday! And I seriously cannot eat another bite! My body is on FIRE from the workout but I have so much more energy....albeit I'm tired and ready for some snoozing! I can't believe how much food I'm eating but I look less bloated and have lost the three pounds. You can't beat that!!

Snow Days

Yesterday, the weatherman had given a Winter Storm Warning to our county with several inches of snow and ice. Of course, this means we'll get nothing BUT ice and North Carolina will shut down!

The sleet came while I was at the office yesterday afternoon and continually fell late into the night. I didn't even set my alarm this morning because I had a feeling the ice wasn't going anywhere.

This morning around 6:38 my eyes popped open and I was panicking I had overslept. Of course, I was the only one in the house awake.



This sweet little lady was snoozing away....of course! Isn't that the life of a mom?! I could've slept a little longer and couldn't and the baby was fast asleep. But I wouldn't trade that memory for anything!!

I went on downstairs and the boys are always so good about being quiet (until they see me). They were so excited that it snowed ice! L-man proceeded to tell me how I would be jealous that he didn't have to go to school today. Yes son, I am indeed jealous!! I miss snow days!

I told them to look at me and smile...
L-man said "But momma, you can't even tell if I'm smiling! Is Scooby smiling?"
I thought "Oh son....those eyes....yes I know if you are smiling!"
 "Take a 'pick-chur' of my gloves, ma-ma!"

They played longer than I thought they would. It was freezing out there!!

After wet boots and icy pants were left in a puddle at the front door, their first request was hot chocolate with whipped cream!

About that time, my ride showed up for work (I wasn't driving in this mess!). So off I trudged. The sky was just starting to turn a little blue.

I love when hubs sends me pics of the kids while I'm at work.
 I don't love when hubs sends me pics of my sweet little princess crying :( She's cold daddy!!!!
Ahhhh, that's better!

Look at those cheeks. (I wonder how many times I've said that she since was born?!?)

I love snow days. Just wish I was always home to enjoy them.

"Clean" Fajitas - Slow Cooker Style

So yesterday, I posted about the Cilantro Lime Chicken - Slow Cooker Style that our Beachbody Team's Challenge Group is doing right now. Also about Clean Eating and what that's all about!

Well, today I bring you Fajitas - Slow Cooker Style!


This recipe is super duper easy.
Yet, supremely yummy!!

It doesn't get much easier than meat, peppers, onions and a taco shell. mmmhmmm. You have the option of dressing it up a little bit by topping it with a little mexi-flavored Greek yogurt and chopped fresh veggies if it tickles your fancy!

Here's what you do...

Take steak & coat with seasonings. Chop veggies. Put it all in the slow cooker.

BAM! 

It really is that simple. I had mine alongside a guac boat and a little bit of corn cut from the cob. The boys gobbled theirs up with cheese on top and the corn on the cob.

Here are the recipes:

Clean Slow Cooker Steak Fajitas

1-2 pounds beef of choice (flank steak, top round, etc.)
2 bell peppers thinly sliced
1 medium onion
1 1/2 tsp cumin powder
2 tsp chili powder
2 tbsp worcestershire sauce
3 cloves garlic
*1 jalepeno pepper (remove seeds and mince)
1/2 tsp salt
black pepper to taste

Mix dry ingredients and rub onto steak. Put rest of ingredients into the slow cooker and cook on high for 5-6 hours. Shred meat with two forks once finished cooking. Serve on tortilla wraps (preferably whole wheat) with your favorite chopped veggies.


Mexi-Flavored Greek Yogurt Spread

3 tbsp non-fat plain Greek yogurt
1/4 tsp cumin
1/4 tsp lime juice
*spice of choice (sriracha, tabasco, etc.)

Mix together and spread onto tortilla or dollop on top!


Guac Boat

Cut avocado in half. Remove pit. Scrape flesh with a fork until mashed. Add a splash of lime juice and garlic salt or Himalayan sea salt to taste. Voila!

DIY Homemade Chalk Paint Part:1

There's a little well known fact about me....I'm cheap.
And I'm a hoarder. 

So after the past few weeks of moving...and moving....and moving more junk.... I had it in my head that I was for sure going to sell or donate to Goodwill, most of the big bulky furniture from our old house. It was outdated. It was u-g-l-y. It was way too heavy and frankly, I didn't want to mess with it.

So I posted the furniture, bless it's heart, on Facebook for sale for what I thought was a great bargain. $200 for an entire dining room set. Someone would snatch that right up...money in my pocket...win-win!!

Too bad my friend guilt-tripped me into keeping the blasted furniture. I huffed and puffed because for ONCE I had actually parted with something!! I was on my way to dehoarding. Or so I thought!

After telling my hubby that we were keeping the furniture after-all...we loaded up the junk and brought it over to the new house. I may have sighed. Really. It was ugly. And big. And it had the worst little seashell-meet-80's-fan look on the front of it.

But. I held out hope. There's this huge Pinterest fad going around about Chalk Paint. Ever heard of it? It's everywhere. Everyone is doing it. It supposedly will make any piece of furniture look amazing, no matter the existing finish.

However, there's no way I'm paying $30 for a quart of paint. Ever. Remember I'm cheap. Not to be confused with cheap date, although that's true too because I'd totally settle for a CookOut milkshake and TacoBell beef meximelt. Yummmm!


Food always distracts me!! Especially when I have a belly the size of Uncle Bob, the family boozer!

Back to chalk paint.....as I've mentioned before, I am a color-phobe. I'm scared to death of choosing, wait, COMMITTING, to color and with a $30 price tag, I'm even more scared!!

I love the teal, yellow, coral, even the hot pink. Especially the green though. It's probably my favorite, oddly enough!

Well Wednesday was D-day for getting all of the rest of the junk from the house so that the new renters can move in. First we had to make a trip to Lowe's to haggle on a stove (that we got at an AWESOME price!! whoop whoop!!). So while they were negotiating and talking appliances, I mosied on over to the paint center. There's one good thing about shopping with your husband, father-in-law and hubby's uncle......I had to hurry. There was no hem-hawing allowed in the paint department. I had to choose and be done.

And I did.
I did it!
I chose a paint color.

And not only one paint color but three!!! (with a little help)

And I also scored BIG TIME!!! I totally should've checked the reject pile first but as it was, I got almost a whole gallon of hot pink that was the exact shade of the quart I had the sweet lady mix for me. If it was not exact, it was pretty doggone close! Plus there were several $1 jars begging for me to add them to my collection of crafting supplies.


I swear I'm getting to the good stuff......

I chose a lovely shade of yellow to overhaul this hideous dresser of mine. Actually, I admit, hubby chose it. What's up with that?! And he actually wasn't rushing me either....he was helpful! He loves color after all! 

We went with "Field of Daisies" in Valspar Low-Odor, Zero VOC. This stuff literally has no smell at all. It's great! And I always say "Gimme the cheapest stuff you've got". I know the people always do an internal eyeroll but whatever. I'm cheap!! I know though that this isn't the cheapest paint, but it is Valspar brand and she probably saw the monstrous belly and saved my kid from growing another arm.

Here's the rundown. Gotta love www.mylowes.com, you can track all of your purchases. Believe me, this comes in handy when you run out of paint, throw the bucket away and realize you need to touch-up and have NO clue what color it was that you bought. Trust me.


Bright yellow. A good bit brighter than the colors I had picked out. But, I wanted hubby involved and because he really has had no say-so in most of the interior choices and there's LOTS of white....so I "let" him choose. And honestly, he did a great job. I love the color.
